I love crock pots because:
- clean up is easy
- lots of leftovers
- I tend to make healthier meals there
-it saves money
- it's so much easier!
I have seen several freezer meals on pinterest and when I saw that Kirstin over at KoJo designs did a post on Getting Organized- a whole month's worth of meals via crock pot freezer cooking. I was motivated to spring into action (and inspired to structure the layout of these recipes like hers). Thanks Kirstin!

All of these meals are dairy free and low calorie. We always cook up a crock pot and then fill storage containers. Half of our stored selection goes into the freezer for easy, healthy and cheap lunches and go -to dinners and the other half go in the fridge for the next day or two's meals.
It feels so great to wake up and toss a bag in the crock pot knowing that dinner is prepared. It is cheap and easy (and an easy clean up if you like slow cooker cooking bags).

All of my recipes are modified versions of Prevention's Slow Cooker Recipes. I have bought several slow cooker cook books and none have come close to comparing with this little magazine.

250 Calories per servingChunky Chicken Stew
In the bag: 1 yellow or white onion chopped, 2 cloves of garlic minced, 1 lb chicken breasts in large chunks, 3 russet potatoes, 1 lb carrots, (I double this as well as double all veggies), 1/2 tsp salt (small separate ziploc: 1 box frozen peas, 3/4 lb whole green beans, 1 tsp hot paprika, 1/2 tsp ground black pepper, 1/2 tsp red-pepper flakes)
Add: 1/2 cup ketchup (I double), 1 1/2 Tbsp Worcestershire sauce
Cook: Combine the large bag ingredients with 15 oz. chicken broth (I double this). Cook low 4-5 hours. Add thawed peas and seasonings. Cook one more hour.

In the bag: 1 lb chicken breasts (whole), 1 large onion chopped, 1 green bell pepper, chopped, 2 ribs celery chopped, 2 cloves garlic minced, cumin and oregano.
Add: 1 jar (16 oz.) salsa verde
Cook: high 4-5 hours or low 6-8 hours. Add in 1 cup of thawed edamame in the last 20 minutes and take out breasts and shred and then stir back in. Top with cilantro.
Optional: 8 oz. shredded mozerella and 12 corn tortillas cut into wedges and baked until crisp. I omit these and serve over brown rice. (We like to squeeze fresh lime or lemon on ours.)

Garlicky Chicken & Rice
In the bag: (separate small ziploc- 4 leeks (2 lbs)), 2 lbs chicken breast, 12 cloves garlic, smashed, 1 1/2 cups wild rice blend
Add: 2 cups chicken broth (I double or triple this and also add in extra leeks), 3/4 cup dry white wine, and 2 oz. pancetta, cubed (omitting), .
Cook: Layer half of the leeks in an oiled slow-cooker pot. Layer chicken garlic and rice on top. pour in broth and wine. Top with remaining leeks and lemon. Cover and cook low 5-6 hours. Serve with 1 small lemon, thinly sliced on top.
